Preparation Mode:

Add the chopped onion, carrots, celery, and minced garlic to the meat and saute until the vegetables are softened. Pour in the red wine and simmer until it has mostly evaporated. In a large, heavy-bottomed pot over medium heat, brown the ground beef and pork, breaking it up with a spoon as it cooks.

Remove excess fat if needed. Bring the mixture to a simmer, then lower the heat to low, cover, and let it gently simmer for at least 1.5 to 2 hours, stirring occasionally, the longer it simmers, the richer the flavors will be. About 30 minutes before serving, pour in the whole milk and stir to combine.

Stir in the crushed tomatoes, beef or vegetable broth, and tomato paste. Add the dried oregano, basil, thyme, rosemary, red pepper flakes if using, salt, and black pepper. Serve the Bolognese sauce over the cooked spaghetti, garnishing with extra Parmesan and fresh herbs if desired.

Cook the spaghetti according to the package instructions until al dente. Drain and set aside. Taste and adjust the seasoning of the Bolognese sauce if necessary.

Stir in the grated Parmesan cheese, fresh basil, and parsley.
