Turkish Kısır (Tabbouleh Salad with Bulgur)
Category: Main Dish

Description: Kısır, a delightful Turkish dish, traces its origins to the southeastern region of Turkey, particularly Gaziantep. With a history dating back centuries, kısır has evolved into a popular and cherished dish, appreciated for its vibrant flavors and wholesome ingredients. Originally known as "kısır-ı sevketi bostan" in Ottoman Turkish, the dish was initially associated with fertility due to its use of fresh herbs. Over time, kısır has become a beloved part of Turkish cuisine, enjoyed in various regions and occasions.

Preparation Mode:

In a large mixing bowl, combine the fine bulgur with hot water and let it sit for about 15 minutes until the bulgur absorbs the water and becomes tender. In a separate bowl, mix together the tomato paste, pepper paste, olive oil, lemon juice, pomegranate molasses, salt, cumin, and red pepper flakes if using. Once the bulgur is ready, add the dressing mixture to the bulgur, stirring well to combine.

Fold in the chopped parsley, mint, green onions, cucumber, and tomatoes, ensuring an even distribution of ingredients. Taste and adjust the seasoning if needed. Allow the kısır to rest for at least 30 minutes to let the flavors meld.

To serve, place the kısır on a platter lined with lettuce leaves, offering a refreshing and tangy complement to the nutty bulgur. Enjoy this delightful Turkish dish as a side or a light main course, perfect for gatherings and celebrations.
