Preparation Mode:

In a medium-sized pot, combine the red lentils with enough water to cover them and cook until tender. Drain any excess water and transfer the lentils to a large mixing bowl. Add the fine bulgur to the warm lentils, stirring to combine.

In a separate bowl, mix the grated onions, tomato paste, pepper paste, lemon juice, olive oil, ground cumin, paprika, salt, and red pepper flakes if desired. Pour this mixture over the lentils and bulgur, ensuring an even distribution of flavors. Allow the mixture to cool to room temperature, then knead it with your hands until the ingredients are well incorporated and the mixture is pliable.

Take portions of the mixture and shape them into small oval or round koftes. Serve the Mercimek Köftesi on a platter lined with fresh lettuce leaves and garnish with lemon wedges. These lentil koftes can be enjoyed on their own or wrapped in lettuce leaves for a refreshing and wholesome treat.
